Mango Jam

Mango Jam is a very simple recipe made with 3 ingredients. Homemade mango jam is healthy and natural fruit preserve. Its smooth texture makes it easy to spread. Its golden orangish colour is from fresh and organic Alphonso mangoes. No doubt it has mouthwatering flavour.




Ingredients


Pulp of 2 mangoes

1 cup sugar

1/2 tsp lemon juice

Pinch of Salt


Method


Take pulp of 2 fresh mangoes. Here I have used Alphonso mangoes. Any variety of mangoes can be used. The final colour of the jam depends on the original colour of mango. Alphonso mango gives a rich orange colour to the jam.


Heat a pan. Mix the mango pulp and sugar. Keep stirring on low to medium heat. Add a pinch of salt & lemon juice. Mangoes have less pectin in them. Pectin is a substance which helps jam thicken and set. As mangoes have lesser pectin, use of lemon is essential.


Keep stirring continuously so that the mixture doesn't settle at the bottom of the pan. After 7-8 minutes pour the mixture on plate and allow it to cool. Tilt the plate to see if the mixture is runny. If it settled well, then jam is ready. If it is runny, cook for a minute or so. If the quantity is more, it may require more time. My quality was less so it took lesser time.


Allow the mixture to cool. Transfer the jam to sterlised glass container. Keep refrigerated for better shelf life.


Delicious homemade mango jam is ready which is free of preservatives. Enjoy with a slice of buttered toast or with freshly made Chapati.
