Aromatic rice cooked with prawns along with spices and yogurt and various Indian spices. Prawns biryani is a different variation of Biryani. Absolutely flavorful with all the goodness of prawns.
2 cups Basmati rice
300 grams peeled and deveined prawns
5 sliced onions
2 chopped tomatoes
1/2 tsp turmeric powder
1 tsp red chili powder
1/2 cup curd
4 tsp ginger ,garlic, green chili, coriander paste
1 tsp Biryani Masala
1 tsp coriander powder
Chopped coriander leaves
3-4 tbsp oil
2-3 tsp ghee
Salt to taste
Whole garam masala
1 star Anise
2 inch cinnamon stick
1 masala cardamom
1/2 tsp shah jeera (caraway seeds)
Wash and soak the rice in water for about 30 minutes.
Heat some oil in a pan and fry 1/2 the sliced onions till they get golden brown and keep aside for layering.
Clean and marinate prawns with salt, lemon juice, green masala paste, turmeric & red chili powder for 30 minutes. Keep aside half of green masala paste & both turmeric & red chili to use while cooking the gravy.
Now heat 2 tbsp oil in pan. Use half of sliced onions and make them brown. Then add chopped tomatoes and cook till then get mushy. Mix the remaining green masala paste, coriander powder, 1/2 biryani masala, Turmeric & red chili powder and mix well. Saute well till the masala are combined and forms a thick gravy. Add curd. Use little bit of water if required. Add Salt and the marinated prawns and switch off the flame. We need not cook the prawns now.
Take lots of water in a pot and bring it to boil. Water is usally 4-5 times the rice. Add salt. Then add all the whole spices to it. Now mix the soaked rice and let it cook. The rice grains start to jump in the water. Cook the rice upto 85%.
In another heavy bottom or non stick pan take some ghee. layer it with the fried onions. Now place a layer of rice. Then add the prawns mixture. Again add the fried onions and sprinkle some biryani masala. In the similar mannner make another layer. Garnish with fresh coriander leaves. Pour some ghee on each layer. Now cover & cook for 10-12 minutes. Keep on medium heat for first 4 minutes and then slow cook later.
After about 12 minutes aromatic prawns biryani is ready. Serve hot with some raita of own choice.
