Tomato Egg Drop soup is an easy to make soup made with tomatoes and egg. It is perfect for the rainy weather. It is a meal in itself.
2 chopped tomatoes
1/2 chopped onion
4-5 garlic flakes
1/2 inch ginger chopped
1 tbsp oil
1 tsp butter
Salt to taste
1 tbsp cornflour
Pepper as per liking
Coriander leaves for garnish
Heat oil in pan. Add chopped garlic and ginger. Saute it. Now add chopped onions and saute. When the onions turn pink in colour , add chopped tomatoes. Cook the tomatoes for 5-6 minutes.
Now add water or veg stock in it. Boil for 5-6 minutes. Tomatoes will now be mushy. Add salt and pepper.
Mix cornflour in water to make corn flour slurry. Add to the soup and stir well. The soup will now thicken.
Whisk one egg and add the egg slowly from a height. At the same time mix the soup. The egg will get cooked as it falls into the soup.
Beautiful egg strands will be formed. Turn off the heat. Tomato egg drop soup is ready to be served. Serve it pipping hot. Grate some cheese into it (optional).Garnish with coriander leaves.
