Amrakhand

Amrakhand (Mango Shrikhand)

Amrakhand is a Maharashtrian sweet made with strained yogurt & fresh mango pulp, topped with different flavours like cardamom, saffron, etc. Shrikhand with fresh mango is surely a lovely dessert. Fresh Mango pulp is used as it is season of mangoes. It has a creamy texture & it tastes awesome with pooris.



Ingredients


500gms yogurt made with full cream milk

1 cup Alphonso mango pulp

100 gms powdered sugar

1/2 tsp cardamom powder

8-10 saffron twigs(optional)

Pistachios & rose petals to garnish

Pinch of salt


Method


Take a muslin cloth & hang the yogurt for 2 hrs to drain the excess water. Then put weight on the hung yogurt for 30 minutes. Ensure that all the water is now drained.


Soak saffron twigs in warm water to get rich orange colour(optional)


Now take a bowl & put this thick yogurt which is called chakka. Mix powdered sugar to it. Whisk it to form a creamy texture. If the yogurt looks very thick to mix, few drops of milk can be added. Hand blender can also be used for this purpose.


Mix fresh mango pulp to this mixture

Add cardamom powder & saffron water.


Garnish with sliced pistachios & dried rose petals.


Refrigerate for an hour. Serve chilled with pooris or just as dessert !!


Tip:The hung yogurt will be reduced to half the quantity.Sugar is generally half of the reduced yoghurt. Adjust sugar according to sweetness of mangoes.
