Apple Cinnamon cake is an healthy cake with wheat. I have used oil instead of butter. It has prominent aroma of cinnamon & crunch of apples.
1/4 tsp Cinnamon Powder
3/4th cup ( a little more than 3/4th cup ) wheat flour
Pinch of salt
1/2 cup Powdered Sugar ( 2 tbsp extra sugar can be added for extra sweetness)
1/4th tsp Baking Powder
1/4 tsp Baking Soda
1/4th cup oil
1tsp Vanilla essence
2 small eggs
2-3 tbsp Milk
Peel one apple & cut into bite size pieces. Dust it with powder sugar & pinch of cinnmon powder. Keep aside.
Sift wheat flour, salt, baking powder & baking soda together. Keep aside.
Mix powdered sugar & oil together & blend with hand blender till the sugar dissolves.
Add Vanilla essence. Beat eggs on high speed.
Now mix the dry mixture in small quantities & keep mixing with the blender. Milk can be added if required. The consistency of the batter should be dropping consistency. Blend till the mixture becomes soft & fluffy.
Apples do leave some moisture when coated with sugar. Keep this in mind when adding milk.
Preheat the oven at 180 degrees celsius for 10 minutes.
Grease a pan of 7 inches from the sides & place parchment paper below. Pour half of the cake batter. Then add the dusted apples & then pour the remaining batter. Place the remaining apples pieces on the top.
Bake for 25-30 minutes till the fork in the centre comes out clean.
Aromatic, healthy apple cinnamon cake is ready. Demold & let it cool completely before cutting.
Tip: Eggs can replaced with 1/4 cup yogurt & additional 1/4 tsp of baking soda to make vegetarian version.
