A good way to incorporate healthy Beetroot in diet is by the way of making cutlets. These cutlets are full of health and taste, not to forget the beautiful pink color which they lend.
1 medium size beetroot
1-2 tsp ginger garlic chili paste
Pinch of garam masala
1 tsp chaat masala
Handful of chopped coriander
Bread crumbs made of bread slices
Salt to taste
Oil to shallow fry
Boil potatoes and beetroot, Grate beetroots and mash the potatoes and keep them separately. Grate carrot and keep aside.
Take 2 tsp oil in a pan. When the oil is hot add ginger garlic chili paste and saute till it turns aromatic. Now mix grated beetroot and carrot. saute for 3-4 minutes so that there is no moisture left. Cool this mixture.
Now add the mixture to mashed potatoes and mix well. Add salt, dry spices, coriander leaves and bread crumbs. Make cutlets of desired shape and shallow fry on both sides.
Serve hot with green chutney or ketchup
