Besan Ladoo is a sweet delicacy prepared on the occassion of Diwali. It is made with besan & pure ghee. Making of Diwali sweets always sounded a tedious & time consuming affair. But it did not turn out to be as difficult and messy as I had imagined. The big grin on my daughter's face made the effort worthwhile !!
2 1/2 cup Besan Flour
1 cup powdered sugar
3/4 cup ghee
1/2 tsp cardamom powder
6-7 finely chopped roasted cashew nuts
8-10 raisins to garnish
1/4 cup fresh cream
Take a pan and roast besan adding ghee little by little on low flame. Keep stirring continuously till the besan changes colour and starts giving aroma of roasted besan.
Before attaining perfect colour, add fresh cream and mix thoroughly. The mixture would now change a bit darker shade.
The mixture might at times turn liquid. But the key to making good ladoos is getting a golden colour to the mixture. Once the colour is attained, turn of the heat. Let the mixture cool down.
Then add powdered sugar, cardamom powder & roasted cashews to it. Roll them into rounded balls of desired size. Fix a raisin on top of each ladoo. Besan ladoos are ready to eat !!
