Bhogichi Bhaji

Bhogichi bhaji is Maharashtrian delicacy prepared on the day of Bhogi which is previous day of Sankranti. Various fresh vegetables are available in winter season. This bhaji is a mixed vegetable prepared with all such vegetables and beans which are easily available in winter months. Bhogichi bhaji uses ingredients like sesame seed which are provides essential warmth during winters.




Ingredients

1 carrot

2 potatoes

1 onion

1/4 cup french beans

1/2 cup green peas

1/2 cup green chick peas(ghate)

1/2 cup butter beans (pavte)

1/2 cup groundnuts

2 Dry Kashmiri red chilli

1 tsp ginger garlic paste

1/4 tsp turmeric pow

1 tsp Goda Masala

2 tbsp sesame seeds

1/4 cup dry coconut

1 tsp cumin seeds

1/2 mustard seeds

Pinch of hing

Handful roasted peanuts

1 tbsp kokum or tamarind pulp

Jaggery as per choice

Salt to Taste

2-3 tbsp oil


Method

Dry roast sesame, coconut, groundnuts separately. Cool it. Then grind it to fine paste. Use water to make paste


Soak few groundnuts in warm water and parboil them. Parboil green peas, green chick peas , other beans till they are cooked 50%


Soak red chilli in warm water and grind it to fine paste.

Heat oil in pan. Add cumin, mustard, hing and mix well. Add chopped onions and saute till they are translucent.


Add ginger garlic paste and cook till it gets aromatic. Now add potatoes and saute well. Then add red chilli paste, turmeric powder, goda masala. Add some water and cover and cook till potatoes are half done.


Then add sesame, coconut paste and saute well it it leaves oil from sides. Now add all ther veggies and saute well. Add salt. Mix well so that masala coats the veggies. Now add some water and cover and slow cook till the veggies get cooked. In between check if the water has evaporated. Add water as and when required.


When the veggies are done add souring agent , kokum, tamarind. In the end add jaggery to balance the taste.


Bhogichi bhaji is ready. Garnish with fresh coriander. This vegetable tends to get thick because of sesame and coconut. Adjust consistency as per choice. This is usually served along with bajari bhakri topped with sesame seeds. Tip

There is no specific quantity for each vegetable. Any other seasonal veggies can be used as per choice
