Brinjals with dried shrimps (sukat)

Sukat is dried shrimps. When sukat is combined with brinjals , it tastes awesome.This is typical CKP dish which is prepared in most of the houses.





Ingredients


1/2 cup dried shrimps

4-5 medium sized chopped purple brinjals

1-2 chopped potato

2 medium sized chopped onions

1 tsp green vatan ( garlic, green chilies & coriander)

1 sliced onion & roasted coconut paste

1/2 tsp amchur powder

1/2 tsp turmeric

1 tsp red chilly powder

Pinch of hing

1/2 tsp garam masala

1 tbsp oil

Salt to taste


Procedure


Soak the dried shrimps in water for 30 minutes till they get soft. Wash them thoroughly. Then marinate with turmeric, red chilly powder,green vatan, salt. Use half to marinate & keep the remaining.


Heat oil in a pan. Saute onions till translucent.Add pinch of hing, turmeric & red chilly powder. Then mix the marinated dried shrimps & saute for 2 minutes. Then throw in the brinjals & potatoes & mix well. Add some salt & water. Cover & cook for 10 minutes.


Check if the brinjals & potatoes are cooked. Else cook for some more time. Now add the roasted onion-coconut paste into it.Mix well. Also put the garam masala into it.


Brinjals with dried shrimps is ready to be serves. Garnish with coriander leaves. Tastes best with bhakri ( roti made with jowar/rice )
