Dahi Vada

Summer is here. The mercury levels have soared. To cool the body down yoghurt plays an important role. Dahi vada is one of the best choice for summer heat. Soft and spongy dahi vada dunked in cool sweet and sour curds makes an interesting summer snacks.

Dahi vadas can be made before hand and can be served with dahi later


2 cups urad dal

1 litre yoghurt

1 inch ginger

2-3 green chillies

1/2 tsp hing

Salt to taste

Oil to fry

Coriander for ganish

Pomegranate pearls( optional)

Cumin powder

Chaat masala power

Red chilli powder

Pepper powder

To temper

2 tbsp oil

1 tsp mustard seeds

Pinch of hing


Soak urad dal for 5 hours in water. Grind the dal in grinder with less water. Add water gradually. Wet electric grinder is the best to get light fluffy vadas.

If mixer grinding is done then, fluff up the batter by hand or spoon after grinding to make it light. Whisk it in only one direction.This the trick to get light and spongy vadas. Air has to be incorporated in the batter to make the batter with light. This would take 8-10 minutes.

But if wet grinder is used the batter is already light and fluffy. Add a dollop of batter in water. If it floats then the batter is perfect.

Now add ginger, green chilies chopped, hing, salt. Do not add salt at one go else the batter becomes loose to handle. Make vadas in 2-3 batches so as to add salt separately in each batch.

Heat oil in pan. When the oil is medium hot, immerse the vadas one by one either by hand or spoon. Size depends on one’s choice. Do not disturb the vadas when just dropped in oil. Allow them to settle a bit. Then turn them occasionally to get even colour.

Fry till they are light golden.

Immediately soak them in water . Salt and hing to be added to this water. Let the vadas soak for about 20 minutes. The vadas will double is size.

Squeeze them gently after 20 minutes and keep aside.

Now whisk the curd so that it is smooth and creamy. Curd should be properly cooled. Add salt and sugar to taste. Temper the curd with mustard seeds, hing and curry leaves. Mix wel. Curd is ready to be poured on vadas.

Place the vadas in plate. Pour enough curds so that it covers the vadas. Now sprinkle cumin powder, red chilli powder, chaat masala and black pepper powder according to personal choice. Garnish with coriander leaves and pomegrante seeds.

Enjoy cool vadas in this summer. It makes excellent starter and snacks. These ingredients make 35-40 vadas approximately.
