Dates & Walnuts are extremely healthy & full of nutrition. Dates Walnut eggless cake is no maida no sugar cake which is healthy and flavourful. This cake is butterless, eggless, sugar less, made from whole wheat and the best part is it tastes absolutely yummy.
Ingredients
1 1/4 cup wheat flour
3/4 tsp baking soda
1/2 tsp baking powder
10-12 dates
1 cup walnuts and few to sprinkle
2 tbsp jaggery
1 1/4 cup milk
2 tbsp curds
1/2 cup oil ( little lesser than 1/2 cup)
1tsp vanilla essence
Pinch of salt
Method
Soak dates and jaggery in warm milk for 30 minutes. Reserve 1/4 cup to adjust the consistency later.
Blend the dates & jaggery mixture in blender. Whisk curd into it. Then pour oil & whisk well. Add vanilla essence
Now sift all dry ingredients & gently fold into the wet mixture. Add the remaining milk. Mix walnuts into the mixture
Preheat oven at 180 degrees for 10 minutes.
Grease a cake pan with parchment paper or grease with butter + flour
Now pour the cake batter in cake tin. Tap few times to remove air bubbles. Sprinkle walnuts on top. Bake the cake for 25-30 minutes at 180 degrees.
Delicious dates and walnuts cake is ready. Demold it once it is cooled and cut into pieces.
