Dates-Walnut Eggless Wheat Cake
Dates & Walnuts are extremely healthy & full of nutrition. This cake is made with wheat flour which adds to the nutrition. It is loved by everyone, especially kids. It makes excellent tea/ coffee time snack.
1 1/2 cups wheat flour
1/2 cup maida
1 1/4 cup powdered sugar
1/2 cup vegetable oil
1 cup water
1 cup milk
1 cup seedless dates
1/2 cup chopped walnuts 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp vanilla essence 2 tbsp honey Pinch of salt Method
Soak dates in warm water for about 30 minutes. Then grind them in mixer & keep aside. Chop walnuts & keep aside.
Now grease baking pan with parchment paper & oil on the sides. Preheat oven at 180 degrees celcius.
Sieve wheat flour, maida, baking powder, baking soda, pinch of salt in a separate bowl.
Take a bowl.Whisk sugar & oil till sugar dissolves.Then add dates mixture to it & mix again. Now add the dry mix & milk alternatively. Then add vanilla essence & honey. Dont over beat the mixture.
Mix chopped walnuts & reserve few. Pour this cake batter into the greased pan & top it with remaininng walnuts.
Bake the cake for 30-35 minutes. Some ovens may take longer time. When the toothpick comes clean in the centre the cake is done.
Demould the cake after 15 minutes. Cut into slices & serve.
