Doodhi Halwa is Maharashtrian delicacy made with bottle gourd (doodhi) flavoured with cardamom. Bottle gourd is a very healthy vegetable but not many are pleased with the taste. But this recipe of doodhi halwa creates magic on the taste buds.
Ingredients
500 gms grated Doodhi
75 gms khava (mava)
3/4 cup sugar
3 tsp ghee
1/2 cup milk
1/2 tsp cardamom powder
Chopped Pistachios, Almonds
2-3 drops Food Colour (optional)
Method
Peel & grate doodhi. Soak it in water to prevent it from turning black.
Heat ghee in a pan. Now saute the grated doodhi for 5 minutes. Doodhi will start leaving water. When the doodhi gets dry, Add 1/2 cup of the milk. Cover & cook for 8-10 minutes.
Check after 5 minutes so that the doodhi does not stick to the pan.
Now add the remaining milk & cover again.
After about 10 minutes the doodhi will be cooked. It will turn soft. Now mix sugar. The mixture will get watery again. Add food colour if desired.
After the sugar gets mixed, add khava & mix well. When the khava blends in the doodhi mixture, Turn off the heat.
Add cardamom powder & mix again. Garnish with chopped almonds & pistachios.
Delicious doodhi halwa is ready. It can be served hot or at room temperature. It can also be served with ice cream as dessert.
