There are many recipes for Christmas Cake. Here I am sharing my version of Christmas cake. I have replaced brown sugar with jaggery due to unavailability of brown sugar. The cake turned out deliciously aromatic fruit cake not to forget the healthy aspect of it.
105 gms chopped jaggery
1/2 cup (120 ml water)
2 tbsp sugar (optional)
1/8 cup (28 gms) unsalted butter
1/2 tsp cinnamon powder
1/4 tsp cloves powder
Pinch of salt
1 cup (150 gms raisins black + golden)
Handful chopped walnuts
1tsp Vanilla essence
3/4 cup (100gms) maida
1/2 tsp Baking Soda
1/2 cup (75 gms) candied fruits (tutti fruity)
In a pan take butter, jaggery, cloves, cinnamon powder, salt,water, raisins, walnuts & boil for 5 minutes. Let the mixture cool to luke warm.
Lightly beat egg into it. Egg should be at room temperature. Add vanilla essence to egg. Mix the beaten egg to the boiled mixture.
Add maida & baking soda & mix well. Now fold the maida to the wet ingredients slowly. Add candied fruits to it.
Preheat oven for 10 minutes at 180 degrees C. Grease a pan of 8 inch with parchment paper. Pour the batter into it & bake for 20-25 minutes till fork comes out clean.
Aromatic Christmas Cake is ready. Allow it to cool & then serve.
