Gajar Halwa

Carrots are in abundance during winter season. These seasonal long, red, juicy carrots impart attractive red colour to the halwa. Gajar Halwa is delicious Indian dessert made with fresh juicy carrots cooked with milk & sugar. The use of khava makes it truly luxurious. This recipe also does not require loads of ghee.





Ingredients

1kg grated carrots

150 gms khava (mava)

1 1/4 cup sugar

3 tsp ghee

1 1/4 cup milk

3/4 tsp cardamom powder

Chopped Pistachios, Almonds, cashews Few raisins (optional)

Method

Peel & grate carrots. Roast some cashews, almonds & keep aside. Heat ghee in a thick bottom pan preferably a non stick one. Now saute the grated carrots for 5 minutes. Carrots will start leaving water. When the carrots get a little dry, add milk. Cover & cook for 8-10 minutes. Check after 5 minutes so that the carrots do not stick to the pan. Now add the remaining milk & cover again. After about 10 minutes the carrots will be cooked. It will turn soft. Now mix sugar. The mixture will get watery again. After the sugar gets mixed, add khava & mix well. When the khava blends in the carrot mixture, Turn off the heat. Add cardamom powder & mix again. Garnish with chopped almonds, cashews & pistachios. Delicious carrot halwa is ready. It can be served hot or at room temperature. It makes excellent dessert when served with ice cream.
