Instant Chakli

Chakli is usually made with bhazani ( mixed roasted dals). Instant chakali can be made without too much preparation. It needs only besan & rice flour which is easily available at home. The finished product is comparable with traditional bhazani chakli. It is absolutely crunchy & aromatic. Let me share the recipe.





Ingredients

2 cups rice flour

1 cup besan flour

2 tbsp hot oil

Salt to taste

2 tsp sesame seeds

1/4 tsp turmeric powder

1/2 tsp red chilly powder

2 tsp coriander-cumin powder

Oil for frying

Method

Mix rice & besan. Add salt, turmeric, red chilly powder, Sesame seeds, coriander cumin powder. Now add hot oil to this.


Crumble this with fingers so that every ingredient is uniformly combined. Now add water & make a soft dough. Do not make very firm dough as the chakli will then crack.

Now make 2 cylindrical rolls & put them in the chakli press one at a time. Use the 7star plate for making chakli.

Heat oil in a pan on slow flame. On a plastic or parchment paper make chakli from the chakli press. Slowly put them in oil for frying. The flame has to be very slow else the chakli gets cooked from outside & it remains uncooked inside.

The key to get good crispy chaklis is to fry on slow flame & keep fliping the sides till the golden colour is achieved. Drain them on absorbent paper. Cool them completely & store in airtight box. 


Flavourful, crispy & crunchy chakalis are ready. This quantity makes 18-20 chakalis.
