Summer season is here and there are plenty of raw mangoes in the markets. Raw mangoes are loaded with Vitamin C. Locally known as kairi in marathi, these are essential part of summer recipes. They can be used in various ways likes juice, salads, pickles, etc. Here I am sharing a recipe of pickle which can be made instantly.
1 raw mango
1-2 tsp red chili powder
1/4 tsp turmeric powder
2 tsp Salt
1/4 cup oil
1/4 tsp Hing(Asafoetida)
1 tsp mustard seeds
Wash the raw mango and thoroughly dry it. Cut into small fine pieces. In a bowl mix the cut pieces, salt, turmeric, red chili powder.
Now keep this mixture in airtight glass jar for 2-3 hours. The raw mango will now leave some moisture because of salt content.
Heat oil in pan. Temper with mustard seeds. Now wait till the oil gets a bit cool. Then add hing as it will burn in hot oil. This tempering has to be poured in the marinated mixture only after it gets to room temperature. Instant raw mango pickle or Kairiche Lonche is ready.
Keep it refrigerated so it stays good even for few months. If more quantity is required, the ingredients can be proportionately adjusted.
