Kothimbir wadi is an interesting snacks made with fresh coriander leaves. It is an easy to make snack with only two main ingredients & rest of them are easily available in every kitchen.

Ingredients
1 cup chopped coriander leaves
1 cup Besan (chickpea flour)
1 tsp coriander-cumin powder
2 tbsp Rice flour
Salt to taste
1/4 tsp turmeric powder
1/2 tsp chilly powder
Pinch of baking soda
Oil to fry
Method
Mix all the ingredients in a bowl & also 1 tbsp oil. Add water & till it forms a not very thick paste. This paste should be a little less thicker than the normal fritter batter.
Grease a pan with oil. Pour this mixture into it. Steam it for about 10mins.
While it is a bit hot, cut them into rectangular blocks when still in pan. Then allow it to cool completely. Shallow fry these in oil till golden brown on both sides. Serve hot with tomato ketchup. Can be served as snack or starter.
