Lasuni palak is simple palak gravy dish with garlic flavour. Healthy spinach with goodness of iron tempered with garlic makes it very interesting.
1 bunch palak leaves
1/4 cup sweet corn kernels (optional)
2 tbsp yoghurt
1 chopped onion
15-18 garlic pods
2 green chilies
1tsp cumin seeds
2 dry red chilies
1 tsp coriander powder
1/4 tsp turmeric powder
1 tbsp gram flour (besan)
Salt to taste
1 tsp ghee
Blanch palak leaves. Chop 1/4 th leaves & blend the remaining palak with green chilies.
In a pan take oil. When the oil is hot add cumin and chopped garlic. Retain half of garlic for second tempering
Saute chopped onion. Add turmeric, coriander powder and saute. Now add besan and roast it with onions. Alternatively roasted besan can be used. Now add curd
Now add chopped palak and then palak paste. Mix well. Cook for 3/4 minutes. Adjust salt
For second tempering use ghee, cumin, dry red chillies and garlic.
Palak lasooni is ready. Serve hot with Chapati or parathas
