Mexican Rice

Mexican rice is also known as Spanish Rice is flavorful one pot meal made with tangy tomatoes and lots of veggies. Red Kidney Beans (Rajma) fulfills the need of  protein in the meal. It is an easy to make dish with available ingredients at home.






Ingredients

2 cups rice

1 sliced green bell pepper

1 sliced carrots

1/2 cup boiled red kidney beans

Handful of french beans

1/2 cup fresh green peas

10-12 garlic flakes

2 cups tomato puree

1 tsp red chilly sauce

1tbsp tomato sauce

1 tsp Italian herbs

1/2 tsp chilli flakes 1/2 tsp pepper powder

Salt to taste

Grated cheese (optional) Method

Soak rajma overnight. Pressure cook for 10 minutes after whistle. Keep aside.


Pressure cook the rice with little less than double water for 3 minutes. This gives separate grains of rice. Rice can also be cooked  without the cooker. But pressure cooking speeds up  the process.

Allow the rice to cool so that the grains are separated.Boil green peas & french beans for 3-4 minutes & keep aside.

Now heat oil in pan. Add garlic & saute for a while. Then add rajma beans along with veggies one by one. Then mix tomato puree into it.


Then add salt, pepper, tomato sauce, Italian spice mix , chilli flakes. Now mix the cooked rice into it.


Grate some cheese on top of the rice as per choice.

Mexican Rice is ready.
