Palak rice(Spinach Rice)

Palak rice is a healthy version of pulav made with fresh spinach, garlic, onions & other spices. This iron rich recipe is quick to make and serves as meal by itself.





Ingredients


1 bunch palak leaves

3 cups cooked rice

1 sliced onion

2 green chilies

Handful of fresh coriander leaves

8-10 chopped garlic pods

1/2 tsp red chili flakes

Salt to taste

1 tbsp oil


Method

Clean palak leaves & blanch in hot water for 1/2 minute. Immediately immerse them in cold water. Now squeeze out the water. Grind the leaves, green chilies & coriander to make fine paste


Heat oil in pan. Add garlic chopped & onions & stir fry till onions turn translucent. Then add spinach puree & mix well.


Now mix cooked rice. Add salt & red chili flakes. Mix well & palak rice is ready to serve. Have it as meal or with veggies of choice
