Paneer is cooked in creamy sauce flavoured with freshly ground black pepper. This is a different recipe from usual paneer recipes. It taste slightl hot as balck pepper is used with creaminess of yoghurt and cashews
Ingredients
250gms fresh paneer
1 onion chopped
1/4 cup yoghurt
10 cashews
2 tsp pumpkin seeds
5 garlic pods
1/2 inch ginger
2 green chilies
salt to taste
1 tsp kasuri methi powder
Fresh cream as per choice
Oil + Butter 1 tbsp
Method
Soak cashews and pumpkin seeds in hot water for 1/2 an hour. Then grind it to fine paste and keep aside.
Roast black pepper for 2/3 minutes. Make a coarse powder once it is cooled.
Cut paneer into desired shape and marinate with hung curd salt and pepper and keep aside for 30 minutes. Then lightly fry so as to get colour.
Heat oil and butter in pan. Saute onions till just translucent . Then add garlic, ginger, green chillies and saute lightly. Cool this mixture and grind to paste.
Now in pan take some oil. When the oil is hot add the ground paste and saute well till oil leaves the sides of pan.
Add cashew and pumpkin seeds paste. Mix the remaining marinade used for marinating paneer And cook for 2-3 minutes.
Now add freshly made black pepper powder And kasuri methi powder. Adjust salt. Add the fried paneer and mix well.
Pour some fresh for creamy gravy. Paneer kalimirch is ready. Serve hot with roti or paratha.
