Pani Puri

Pani Puri or Gol Gappas is one of the known & favorite chaats which forms one of the famous street food of Mumbai. It is loved by all age groups. Its a filling of sprouts with sweet, delicious spicy & tangy water in puris.





Ingredients


50 Rounded Puris




The Puris


For Filling


1 mashed potato

1/2 cup boiled moong sprouts

1/2 cup boiled white peas

1/4 tsp turmeric


For the Pani ( spicy water )




Spicy Pani


3 tbsp Pani puri masala

3-4 green chillies

1/2 tsp cumin seeds

8-10 mint leaves

1/2 cup coriander leaves

1/2 tsp black salt

1/2 tsp rock salt

1/2 tsp amchur powder

1/2 tsp chaat masala



For Sweet Chutney


7-8 dates soaked in warm water

1tbsp tamarind pulp

2 inches jaggery

A pinch of salt


Method


Pressure cook potatoes, white peas & moong with little turmeric & salt & keep aside.

Grind all the ingredients of sweet chutney to paste.




Grind green chillies, mint, coriander, cumin together.Then take 600ml of water. Mix the green chilly mixture to it. Add pani puri masala,rock salt, black salt, amchur powder to it. Stir it & check if salt is required. Garnish with coriander leaves. Refrigerate it. Tastes best when served chilled.

Now take the puris. Break the crust, fill it up mashed potatoes, moong & white peas in it.Add some sweet chutney & then dip the puris in the water. Serve it immediately. Its simply irresistible !!

Tip :Spiciness of the paani & sweetness of the chutney can be customised according to individual liking
