Chickpeas cooked with onions, tomatoes and lots of Indian spices giving it a spicy and tangy taste. It is popular street food especially in North India. Chole are usually served with bhaturas https://www.thefoodiefun.com/post/bhatura which are a kind of fried puris.
Ingredients
1 1/2 cup chick peas
2 medium onions
2 tomatoes
1 tsp ginger garlic paste
1 inch cinnamon stick
2 cloves
1/2 tsp turmeric
1 tsp red chilly powder
1/4 tsp amchur powder
2 tbsp oil
Salt to taste
Coriander leaves to garnish
To temper
1tbsp ghee
7-8 ginger julienne
Method
Soak the chick peas overnight in water. Pressure cook them the next day.
Sliced onions & stir fry them till brown with little oil. When they cool grind them into a fine paste.
Make puree of 2 tomatoes.
Now heat oil in pan. Add cloves, cinnamon stick & mix. Then mix the onion paste & saute for 2-3 minutes.Then add the tomato puree. Saute till oil separates. Then mix the ginger garlic paste & saute for a minute. Add turmeric & red chilly powder & mix well.
Mix the boiled chick peas now & add salt as per taste. Add amchur powder for tangy taste.Add some water to this & cover & cook for 5-6 minutes.
Turn off the heat. Heat ghee in another pan.Temper with ginger julienne & green chilies (optional)
Garnish with coriander leaves.Punjabi Chhole is ready to serve. Can be eaten with bhatura, pooris or chapatis/phulkas.
