Sabudana Vada (Sago Fritters)

Sabudana vada is a popular Maharashtrian snack prepared with sago which is relished on the days of fast. But it is an anytime snack on the other days too. It is easy to make recipe.




Ingredients

1 cup Sabudana

2 Mashed potatoes

1/2 cup coarsely ground peanuts 

2 chillies

1/2 tsp cumin seeds (jeera)

Salt to taste

Oil to fry

Chopped Coriander (optional)


Procedure

Soak sabudana for one hour in water. Strain after an hour in a vessel for 2 more hrs. All the water should be soaked by then. Sometimes depends on the quality of sabudana.

For the vadas the sabudanas should be nicely soaked but dry to touch.If they are sticky the vadas will be sticky too.

In a bowl mix sabudana, mashed potatoes, coarse peanuts, chopped chillies & jeera. Add salt accordlng to taste & knead well. Add few drops of water only if required. Usually it gets kneaded without water.

Roll them into small flat balls & deep fry them in oil. Crispy Sabudana vadas are ready. Can be served with coconut chutney.
