Schezwan fried rice is a popular fried rice variety from the Indo chinese cuisine. It is quite popular & is most ordered in Indo-Chinese restaurant. Unlike the regular fried rice, schezwan fried rice is hot & spicy with bursting flavors of ginger, garlic, soya sauce & red chilli paste. Cooked rice is tossed with Schezwan sauce along with choice of veggies or any kind of protein. Here I have used mushrooms, green pepper, spring onions, carrots with fresh prawns.
Ingredients
4 cups cooked rice
100 grams fresh prawns
10-12 garlic pods chopped
1/2 inch ginger chopped
1 green bell pepper
1 sliced onion
Few spring onions greens
1 carrot cut in juliennes
5-6 mushrooms
1tsp Soy Sauce
2 tbsp Schezwan Sauce
1/2 tsp pepper powder
Salt to taste
1 tsp vinegar
2tbsp Oil
Method
Quick method to cook rice is pressure cook with lesser water just for 3 minutes after whistle. This rice will have separated grains
Heat oil in wok. Add garlic and ginger and saute for 1 minute
Add prawns and saute well. Then add veggies & saute on high heat. Then add Schezwan sauce, soy sauce & vinegar. Adjust salt & pepper
Mix everything well & Schezwan fried rice is ready. It is meal by itself as it has proteins plus lots of veggies
