Shengavi is shenganchya ( drumsticks) curry is delicious and flavourful curry made in Maharashtra.
Drumsticks are source of iron and calcium hence it is a very healthy vegetable.
Drumsticks curry is blend of spice and tanginess which makes it extremely delicious .
250 gms drumsticks
1/4 cup fresh coconut
1/2 tsp turmeric
1 tsp red chilli powder
1/2 tsp coriander cumin powder
2 tsp besan flour
Pinch of hing
1 tbsp tamarind pulp
2 tsp jaggery
Salt to taste
1 tbsp oil
Peel the drumsticks and cut into 3 inch pieces. Wash well.
In a pan take water. Add turmeric , hing and salt and boil the drumsticks till they are tender.
Now add besan, red chilli powder, coriander cumin powder , tamarind pulp and jaggery. Adjust salt. Bring the mixture to boil.
Now grind coconut to fine paste along with water. Mix this paste to drumsticks.
Heat oil in tadka pan. Temper with mustard seeds and hing. Add this tempering to drumsticks mixture. Boil for a minute.
Delicious tangy, spicy drumsticks curry is ready. Serve with rice
