Stuffed Mushrooms

Stuffed Mushrooms is a popular starter at restaurants. These are extremely high on flavours and makes interesting starter or snack. Here I have stuffed them with onions, bell peppers and cheese. The combination of mushrooms with cheese is irresistible. I have pan fried them instead of baking. Alternatively they can also be baked.






Ingredients


12 button mushrooms

1 finely chopped onion

5-6 garlic flakes

1 inch ginger

1-2 chopped green chilies

1/2 finely chopped bell pepper

2 cubes of processed cheese

Salt to taste

1/2 tsp pepper powder

1-2 tbsp oil


Method


Take around 12 button mushrooms, the bigger the better. Do not clean them by soaking in water. Wipe them clean with wet cloth. Then dry them with a clean cloth. Now remove the stalks carefully. Scoop the inside of the mushroom with a small spoon to make space for filling.


Now chop the stalks and everything that is removed while scooping the mushrooms. Keep aside.


Heat oil in a pan. Add garlic, ginger, green chilies and saute lightly. Then add onions and saute till they turn pink. Then add chopped bell peppers and chopped mushroom stalks. Cook on high flame as mushrooms release water and the mixture might leave moisture. Then add salt & pepper. Turn of the heat and grate some cheese into it. Cheese will help the bind the mixture. Let the mixture cool for a while.


Now fill the mushroom caps with the prepared filling. Grate cheese on each mushroom. Heat some oil in pan. Place the mushrooms carefully.


Cover and cook for not more than 4 minutes. Remember to cook on medium heat else the mushrooms will get soggy because it has lot of water content. Cheesy stuffed mushrooms are ready. Garnish with some chopped coriander leaves. Serve as starter or just as snack.
