Tomato Rice can be prepared with basic two ingredients from the kitchen one is tomatoes & another is onions. It makes excellent meal when one wants to have a simple but nutritious food.
Ingredients
2 chopped tomatoes
1 chopped onion
1 cup rice
1 tsp ginger garlic paste
1/2 tsp red chilly powder
1 tsp Rasam powder
7-8 curry leaves
1/2 tsp mustard seeds
Pinch of asafoetida (hing)
Salt to taste
2 tbsp oil
Coriander to garnish
Method
Cook rice with double water. The rice should be done like pulav having separate strands. Leftover cooked rice can also be used.
In a pan heat oil. Temper with mustard seeds, hing, curry leaves & mix well.Then add onions & tomatoes. Saute till onions get translucent & tomatoes get partially cooked not fully mushy.
Then add ginger garlic paste, tumeric, red chilly & rasam powder. Cover & cook for 2-3 minutes.
Then add the cooked rice & add salt as per taste. Tomato rice is ready. Garnish with fresh coriander leaves & serve hot.
