Veg Handi

Veg Handi is popular dish served in restaurants, Here I have used mixed veggies like cauliflower, potatoes, carrots,mushrooms, green peas with onion tomato gravy flavoured with Indian spices




Ingredients


8-10 Cauliflower florets

2 Potatoes

1 chopped carrot

6-7 mushrooms

1 chopped green bell pepper

Handful of corn kernels

1/4 cup green peas

2 chopped onions

3 tomatoes

Salt to taste

2 tbsp oil

1 tbsp ghee

2 tsp ginger garlic chili paste

1/2 tsp Garam masala

1 tsp coriander powder

1/4 tsp turmeric powder

1 tsp Kashmir Red chili powder

1/2 tsp cumin seeds

1 tbsp fresh cream

Juice of a 1/2 lemon


Method


Make tomato puree with 3 tomatoes and keep aside. Parboil all the veggies except mushroom and green bell pepper. There is no fixed quantities of vegetables to be used. Any vegetables can be used as per liking.


Heat oil and ghee in a pan. Add cumin seeds. After they crackle add onions and saute till they become pink. Now mix the tomato puree and saute till the oil separates.


Now add ginger garlic chili paste and mix well. Then add all dry spices and saute them well. Add salt to taste. Now mix mushrooms and green bell peppers and saute for a minute. Mix all the remaining vegetables. Cover and cook for about 5 minutes.


Add fresh cream just before turning off the flame. Squeeze some lemon before serving. Garnish with coriander.
