Veg Noodle Soup

Veg Noodle soup is a simple recipe with lots of veggies & noodles. It can be made with whatever vegetable available at home. Here I have majorly used mushroom, broccoli, babycorn. It is perfect for the rainy weather.





Ingredients

4-5 buttom mushrooms

4-5 babycorn

7-8 broccoli florets

4-5 cabbage leaves chopped

4-5 spinach leaves

1/2 par boiled chopped potato (optional)

1/2 carrot cut in fine blocks

1/2 tsp chopped garlic

1/4 tsp chopped ginger

2 tsp butter

1-2 tsp corn flour

Salt to taste

Black pepper powder

Handful boiled noodles


Method

Take butter in a pan. Add chopped garlic & ginger & saute it. Then add carrot, mushrooms, par boiled potatoes,cabbage leaves, carrot  & saute for 2 minutes.


Add one litre water or veg stock & let it boil for tilll the veggies are cooked. But do not over cook the veggies. Let them be a little bit crunchy.


Now blanch broccoli & baby corn separately & mix to other veggies. Then mix chopped spinach leaves. Add salt & pepper to season. Mix boiled noodles to it. Now add corn flour paste ( corn flour with water )& boil for a minute.

The soup will thicken a bit after mixing corn flour paste. Serve it hot.
