Veg Pulav in Biryani style is a combination of Pulav along with lots of veggies with the touch of Biryani flavor. Basmati long grain rice cooked with veggies in Indian spices. It is an alternative way to achieve Biryani taste with less efforts.
1 1/2 cup Basmati rice
2 sliced onion
2 chopped tomatoes
8-10 florets of cauliflower
1 green pepper
Salt to taste
1 tsp Cumin
1/2 tsp caraway seeds (shahi jeera)
Whole Garam masala
1 masala cardamom
1 star anise
Soak Basmati rice in water for half an hour
Heat oil or ghee. Add cumin and caraway seeds and saute. Now add sliced onions and saute till they get golden brown. Now add whole garam masala. Then add tomatoes and cook till they are mushy.
Then add the ginger chili paste and mix well, Then add dry spices and saute it. Now mix 1/4 cup yogurt and mix well.
Now add the parboiled vegetables. Then mixed the soaked rice. Mix the boiled water. Add salt to taste. Cover and cook for 8-10 minutes. Biryani style pulav is ready.
