Burned Garlic Rice

Burnt garlic fried rice is a fragrant, smoky twist on classic fried rice. The star is garlic—sliced or finely chopped—fried until golden brown and just shy of charred, releasing a deep, nutty aroma. This “burnt” garlic is then folded into stir‑fried rice along with onions, vegetables, soy sauce, and a touch of vinegar.

Ingredients
• 2 cups cooked rice (pressure cook with less water)
• 2 tbsp oil
• 20-25 garlic cloves (finely chopped)
• 1 small spring onion (finely chopped)
• ½ cup mixed vegetables optional(carrot, corn, beans, peas)
• 1 tbsp light soy sauce
• 1 tsp vinegar
• Salt & pepper to taste
• Spring onions for garnish
Method
1. Heat oil in a wok. Add garlic and sauté until golden brown and slightly burnt for a smoky flavor. Fry remaining garlic till it light golden colour and keep aside
2. Add onion and stir‑fry until translucent.
3. Toss in mixed vegetables and cook for 2–3 minutes.
4. Add rice, soy sauce, vinegar, salt, and pepper. Stir‑fry on high heat until rice is evenly coated and aromatic.
5. Garnish with spring onions and crispy fried garlic bits.
