Quinoa Khichdi — a modern, protein‑rich twist on the comforting Sabudana version
Wholesome comfort, reinvented — Quinoa Khichdi.
Fluffy grains meet golden ghee, green chilies, and tender potatoes,
finished with a squeeze of lemon for that perfect zing.
Protein‑packed, light, and soul‑warming.

🥣 Recipe
Ingredients
• 1/2 cup quinoa, rinsed
• 1 boiled potatoes, diced
• 1 tbsp ghee
• 2–3 green chilies, slit
• 1 tsp cumin seeds
• 1/4 cup Roasted and crushed peanuts
• Salt to taste
• Lemon wedges for garnish
• Fresh coriander (optional)
Method
1. Soak quinoa for 30minutes with 3/4 cup water. Pressure cook for 4-5 minutes. Let it cool and fluff it up with fork. Add salt and roasted, crushed peanuts with it
2. Heat ghee in a pan, add cumin seeds and green chilies.
3. Toss in boiled potatoes; sauté till lightly golden.
Add fluffed quinoa to it.
4. Mix until quinoa turns translucent.
5. Season with salt, garnish with lemon wedges and coriander.
Tip : Quinoa can be cooked a day before for quick preparation
