Chicken Hara Masala is a fresh flavored chicken in green gravy. This green gravy gets its prominent flavor from coriander seeds and fresh coriander leaves. The fresh green color is from blanched spinach leaves.
1kg Chicken with bones
2 medium sliced onions
1/2 tsp turmeric powder
2 tbsp curds
7-8 green chillies
6-7 garlic cloves
1 inch ginger
2 tsp coriander seeds
2 cups coriander leaves with stems
1 cup palak (Spinach)puree
3 tbsp oil
Salt to taste
Grind garlic,ginger,coriander seeds,coriander leaves,green chillies in mixer to make a smooth paste. Divide it into 2 parts, one for chicken marination & other while preparing the gravy.
Marinate chicken with this green paste,curds,turmeric & salt for about 2-3 hrs in fridge.
Till the chicken is getting marinated do some other preparation. Fry sliced onions ( just a bit of oil required ) in a pan till they get translucent.Take care not to fry them more as they would change color.
Blanch palak leaves in boiling water for 2 mins & drain them under cold water.Make puree from it.
Making of chicken
Heat oil in pan .Add the fried onion paste & then green paste.Keep stirring till the aroma comes.Then add the marinated chicken & mix well. Add 1/2 cup water & cover & cook for 10 minutes.
Remove the lid & check if the chicken is tender.Add salt as per requirement & cook again till the chicken is fully cooked.
Mix the palak puree now so the gravy gets rich green color.Turn off the heat in 2 mins else the green colour would start turning black .
Serve hot with roti or rice
