Chicken Kala Masala (Chicken in black gravy) - Rustic Maharashtrian style Chicken made with aromatic kala masala with roasted coconut & onions.
This recipe needs preparation of masalas & it involves some effort to get the desired taste. If all the steps are followed it turns out to be super delicious with unique black masala.
Ingredients
Marination for chicken
1kg Chicken
2tbsp ginger garlic green chilli paste
1/2 cup yoghurt
Salt to taste
Black Masala
1whole charred onions
1/2 Dry coconut charred
Special Garam masala
4tbsp coriander seeds
3 tbsp sesame seeds
Dry Red chillies
2 black cardamom
5 cloves
10 pepper corns
10 tirphal
10 Nagkesar
1 Star anise
2 Bay leaves
2 inch Cinnamon Stick
1 Mace
1 tsp Salt
For Chicken Gravy
2tbsp oil
1 chopped onion
1Tbspn green paste
1 tsp red chilli powder
1/2 tsp turmeric powder
2-3 tbsp Special garam masala
Kala masala mix
Method
Marinate chicken with the given ingredients for 5-6 hours or overnight in fridge.
Roast onion & coconut on direct flame till it gets charred. Cool them & grind it to make paste. Use water if required.
Roast all the ingredients mentioned under title Special Garam Masala lightly on pan & cool them. Grind it to powder. Store in air tight container.
Heat oil in pan. Saute chopped onions till they turn translucent. Saute green paste. Now mix marinated chicken & saute on high flame.
Add dry spice & garam masala. Mix well. Now mix the onion coconut black paste. Adjust salt. Cover & cook for 12-15 minutes. Check occasionally and add water if required.
Chicken Kala Masala is ready. Tastes best with jowar or rice Bhakri.
