Egg Curry is often made when there is no other meat options available. Sharing this egg curry recipe which is simple yet flavorful, cooked along with coconut & aromatic herbs & spices.
4 boiled eggs
1/2 tsp red chilli powder
1/4 tsp turmeric powder
1 chopped onion
2 chopped tomatoes
Salt to taste
10-12 Spinach leaves
1/2 tsp garam masala
2 tbsp oil
3-4 green chilies
4-5 garlic pods
1/2 inch ginger
Handful coriander leaves
1/2 cup grated coconut (fresh or dry coconut)
Boil eggs for 10 minutes. Let them cool. Peel the eggs & cut into halves. Now sprinkle salt, turmeric & red chilli powder on the eggs.
In a pan take some oil & shallow fry the eggs lightly on the yolk side down. Keep them aside.
Grind all the ingredients under the heading green masala. Heat some oil in pan. Add onions & cook till they turn pink. Now add tomatoes. Cook till they get mushy. Cover & cook for 3-4 minutes.
Now add turmeric & green masala paste & cook it for a while. Add salt to taste. Now add garam masala powder. Add water the adjust the consistency as per choice.
In the meanwhile blanch palak leaves & grind it to fine paste. Add this palak paste for rich green colour. Cook for 2 minutes. Now add the prepared eggs in this gravy. Do not overcook as the yolk will dissolve in the gravy.
Egg Curry in green masala is ready. Serve hot with chapatis, rotis or steamed rice.
