Jamaican Chicken wings

Jamaican Chicken wings are delicious starters with crispy outer skin and juicy meat. It is loaded with flavour with assorted spices. It is a simple recipe with just marinate & cook. This can be grilled or pan fried and doesn’t need deep frying.

1/2kg chicken wings

1/2 onion chopped

Handful spring onion greens

3 garlic cloves

2 green chilies

1 tsp black peppercorns

1 tbsp soy sauce

1/2 tsp cinnamon powder

1/4 tsp clove powder

1/4 tsp nutmeg powder

1tbsp brown sugar or jaggery powder

1/2 lime juice

Salt to taste

Pinch of turmeric powder

1/4 tsp cumin seeds

1/2 tsp mixed herbs

1 tbsp oil


Mix all the ingredients and blend together in mixer.

Marinate the chicken wings with this paste for 1-2 hours. Reserve some marinade for later.

Heat a pan on high flame. Pan fry the pieces first on high heat so as to get golden brown colour. Drizzle oil only if required. Use the remaining marinade to retain the juiciness of chicken

The meat gets cooked in its own fat from skin and juices from marinade. Lower the flame and cook till the meat is tender.

Serve hot. It makes an excellent starter or accompaniment with fried rice
