Kung Pao Chicken is a stir fry classic chinese dish with boneless chicken, vegetables tossed with peanuts and chilies.
Ingredients
250 gms boneless chicken
7-8 chopped garlic
1 inch chopped ginger
2-3 dried red chilies
2 tsp soy sauce
Handful of roasted peanuts / cashews
Green Capsicum diced
1/2 diced onion
Salt to taste
2 tsp Oyster sauce (optional)
2 tbsp oil
2 tbsp corn flour
Method
Cut boneless chicken into cubes of 1/2 inch thickness. Marinate it with soy sauce. Then sprinkle corn flour on it. Let the corn flour coat the chicken.
Heat oil in wok. Quickly stir fry the chicken on high heat & keep aside.
In same wok take 1 tbsp oil. When the oil is hot add garlic, ginger, dry red chilies & mix them for a minute. Now add onions,green capsicum & mix well. Then mix the stir fried chicken & roasted peanuts
Put soy sauce & oyster sauce. Add salt as per taste. Put 1/2 cup water & let it boil. Make thin paste of corn flour & mix it to the chicken. When the sauce thickens turn off the heat. Garnish with greens of spring onions.
Serve hot with fried rice or noodles.
