Linguine in Tomato Herb sauce

Linguine is a kind of pasta which looks like flattened noodles. Here I have used linguine in tomato herb sauce. It can be relished with meat or veggies.




Ingredients

200 gms Linguine

8-10 florets of broccoli

3 chicken sausages

1 tsp dried mixed Italian herbs

5 medium size tomatoes

1 onion

4 garlic flakes

1 tsp red chilly powder

6-7 chopped garlic

1 tsp sugar

3 tbsp olive oil

Salt to taste


Method


Boil pasta with salt till it is al dente ( firm but not hard ). Drain it & drizzle some oil on it so that it doesn't stick to each other.


Blanch broccoli with salt for 2 minutes & keep aside. Stir fry chicken sausages & keep aside


To make the tomato sauce


Roughly chopped tomatoes, onion & garlic flakes. Heat oil in pan.Then add garlic & stir fry it for a while.Take care not to let the garlic turn brown.


Then add tomatoes & onions .Saute it till it is cooked. Add some salt, sugar & red chilly powder.


Let this mixture cool. Then grind it to paste. Pasta sauce is ready.



To make pasta


Heat oil in pan.Then add chopped garlic & saute it. Add broccoli, stir fried chicken sausages & mix well. Various other veggies like mushrooms, bell peppers of different colours, olives can be used instead of meat. This becomes the vegetarian pasta


Add the tomato sauce & boiled pasta. Sprinkle black pepper powder. Adjust salt as per taste. Pasta is ready. Can be served hot with garlic bread. Garnish with parsley.
