Methi Chicken is a preparation made with fresh fenugreek leaves which gives it a distinct aroma of methi along with other spices. This a popular dish in restaurant by the name Murg Methi.
Ingredients
1 kg Chicken with bones
2 cups chopped methi leaves
1/2 cup fresh coriander leaves
3 sliced onions
2 tbsp ginger garlic paste
1 cup yogurt
1 tsp turmeric power
2 tsp red chili powder
1 tsp kasuri methi powder
2 inch cinanmon stick
3-4 cloves
8-10 black pepper
Salt to taste
2 tbsp oil
1 tbsp ghee
Other dry spices
2 tbsp coriander seeds
1 masala cardamom
1/2 star anise
2-3 pieces of stone flower(dagad phool)
Method
Dry roast the ingredients under dry spices and make a powder. Use 1/2 of marination of chicken and remaining half while cooking. In the similar way use half quantity of yogurt, ginger garlic paste for chicken and rest while making gravy.
Marinate the chicken pieces with ginger garlic, turneric, yougurt, dry spice mix, turmeric, red chili powder, salt, kasuri methi powder and keep aside for preferably 4 hours in refrigerator.
Heat some oil in pan and saute onions till golden brown. Add pinch of salt to speed up the process. After it cools down make a fine paste of onions and coriander leaves. Use water if required.
Now heat oil + ghee in a pan. When it is sufficiently hot add cinamon stick, cloves and black pepper. Mix the onion coriander paste. Then add remaining ginger garlic paste and saute till it turns aromatic. Then mix the chopped methi leaves and saute it. Then add yogurt and dry spice mix.
Saute all the masalas in medium heat till oil starts leaving on the sides. Now add the marinated chicken and saute on high flame for 4-5 minutes. This will retain the juiciness of the chicken. Now use 1/4 cup water to this chicken mixture. Cover and cook for 8-10 minutes on low flame. Do not use too much water as it dilutes the flavours.
After 10 minutes, check if the chicken is cooked. Adjust water if required. Methi chicken is a semi thick gravy dish so it is advisable not to use lot of water. Cover and cook for 5 more minutes, By now the chicken will be cooked. Garnish with fresh coriander leaves.
Restaurant style Methi Chicken is ready. Serve with chapati, bhakri or paratha. Tastes yummy even with set dosas.
Red chili powder can be added according to desired spice level. Chopped green chilies can also be used in addition to red chili.
