Spicy Chicken Masala is made with whole chicken & other spices in onion gravy. Its is perfect recipe for winter.
1 Kg whole chicken
3 sliced onions
2 tsp ginger garlic paste
1 tsp turmeric powder
3 tsp red chilly paste
2 tsp dried red chilly paste (use kashmiri chilies)
2 tbsp yogurt
2 bay leaves
1 inch cinnamon stick
1 Star Anise
1/2 tsp Garam Masala Powder
3-4 tbsp oil
Salt to taste
Cut the chicken into medium pieces. Marinate with yogurt, turmeric, red chilly powder, ginger-garlic paste, salt to taste & garam masala powder. Keep it in fridge for about 3 hours.
Sliced onions & lightly fry them in oil till golden brown colour. Grind it to paste after cooling.
Heat oil in pan. Add cloves, cinnamon, star anise, bay & mix it. Add the dried Kashmiri chilly paste to it. This will give the gravy bright red colour. Then add onion paste & saute well till oil leaves the side of pan.
Now add the marinated chicken & mix well. Add 1/2 cup water & cover & cook. Check after 15 minutes. Add some more water if required. The gravy is medium thick consistency. Cover & cook for 5-7 minutes
When is chicken is cooked the gravy is ready. Garnish with fresh coriander leaves. Can be served with chapati, roti or phulkas. Tastes best with bhazani vade.
